Marc Liss cuts the Dashi Utility Knife from a mid-century sawmill blade in Balmoral, Manitoba, a village north of Winnipeg. The knife follows the Japanese kiridashi pattern, a single bevel with no handle, and carries a 4-centimetre edge at 70 grams. Origin Handcrafted designs and makes every piece in the same Balmoral workshop, so nothing here crosses a border before it reaches you. Liss makes everything to order, and the shop quotes eight to ten weeks per piece.
